DELICIOUS? YOU BET!
1 lb of Penne pasta cooked according to the package
1 cup shredded carrots ( I used a combination of orange, yellow and red)
3/4 cup roasted brussels sprouts
1/2 cup cherry tomatoes in halves
1/2 cup queso fresco or feta
1/2 cup spinach in ribbons
feel free to add any other veggies you’d like
3 tablespoons melted butter
Lemon Garlic butter sauce:
2 tablespoons olive oil
4 garlic cloves finely chopped
1/2 tablespoon Dijon Mustard
1/2 teaspoon honey
Juice of one lemon
salt and pepper to taste.
Once you've cooked your pasta, let it cool and then add all your veggies, mix well together and pour the lemon garlic butter on top, toss all together. Add more cheese if you'd like. Enjoy!
