Pasta Salad with Veggies with lemon garlic butter sauce

  • 1 lb of Penne pasta cooked according to the package

  • 1  cup shredded carrots ( I used a combination of orange, yellow and red)

  • 3/4 cup roasted brussels sprouts 

  • 1/2 cup cherry tomatoes in halves 

  • 1/2 cup queso fresco or feta

  • 1/2 cup spinach in ribbons

  • feel free to add any other veggies you’d like

Ingredients:

  • 3 tablespoons melted butter

  • 2 tablespoons olive oil

  • 4 garlic cloves finely chopped

  • 1/2 tablespoon Dijon Mustard

  • 1/2 teaspoon honey

  • Juice of one lemon

  • salt and pepper to taste.

Lemon Garlic butter sauce:

Method:

Once you've cooked your pasta, let it cool and then add all your veggies, mix well together and pour the lemon garlic butter on top, toss all together. Add more cheese if you'd like. Enjoy!
