Berry Oat Bars

  • 2 cups of oats (GF is an option)

  • 1 ½ cups almond flour

  • 1 cup coconut sugar

  • 1 teaspoon baking powder

  • ½ cup regular or vegan melted butter

  • Start by making the berries chia jam.

  • In a small saucepan low to medium temperature combine all the jam ingredients until a jam looking consistency adding water if you need.

  • Put aside and let it cool down. Next for the crust combine all crust ingredients in a large bowl and mix well.

  • Transfer about 3 ¼  of the mixture to a 9” pan with parchment paper.

  • Press down, add the berries jam on top, and lastly the rest of the crust mixture.

  • Bake in a 350F oven for one hour or until golden brown.

Let them cool down and cut into bars. Enjoy them as snacks or even dessert with a scoop of vanilla ice cream or whipped cream.

Berries Chia Jam filling:

  • 2 ½ cups frozen berries

  • 3 tablespoons  coconut sugar

  • 2 tablespoons cornstarch 

  • 3 tablespoons lemon zest

  • 1tablespoon lemon juice

  • ¼ teaspoon vanilla 

  • 2 tablespoons chia seeds
